Italian Roast Beef     Stacie Palmer

2-4 lb. roast(grass fed of course)

1 can beef broth

1pkg. Good Seasons italian dry dressing mix

5-6 pepperoncini peppers

Put roast in crock pot and cover with beef broth. Cook on low atleast 8 hrs. Next take roast out of crock pot and shred, add packet of seasoning to the broth, then put your roast back in.  Finally, add your peppers, and simmer 2 more hrs. ENJOY!Leftovers make delicious sandwiches. I put them on hoagies, with provolone cheese. For all you farm wives like me who are always looking for new sandwich ideas to take to the field, these are PERFECT!

This is my husbands favorite meal. I’m pretty sure he would have asked me to marry him sooner, if I had made this 12 yrs ago.

Lasagna      Stacie Palmer

2 lbs. ground beef

2 jars favorite spaghetti sauce

1 large container cottage, or ricotta cheese

1 lg package shredded mozzarella cheese

parmesan cheese

1box lasagna noodles

Brown meat, drain fat. Add spaghetti sauce, and simmer for a few minutes. Cook noodles in salted boiling water until tender. In a 9×13 baking dish spread a couple spoonfuls of sauce. Cover pan with lasagna noodles, then half meat mixture, half cottage cheese, mozzarella cheese, then repeat layers. Top off with parmesan cheese. Bake @ 350 for thirty minutes. I usually put it on broil the last 5 minutes or so to get the cheese brown and bubbly. I love to make this in the summer when I have fresh romain lettuce in the garden for a salad, and I always serve with garlic bread.

Beef with Snow peas

2 lbs sirloin steak, sliced very thin against the grain

1/2 cup soy sauce

3 Tbs Cooking Sherry

2 Tbs brown sugar

2 Tbs cornstarch

1 Tbs minced fresh ginger

8 ounces garden fresh snow peas

5 whole scallions, cut in 5 inch pieces on the diagonal

salt if needed

3 Tbs olive oil

crushed red pepper

Jasmine or long grain rice, cooked according to package

In bowl, mix together soy sauce, cooking sherry, brown sugar, cornstarch, and ginger. Add sliced meat to bowl and toss with hands. Set aside. Heat oil in a heavy skillet, or wok.( I use a cast iron skillet) Add snow peas and cook for about 1 minute.Remove. Allow pan to get very hot, then add half meat mixture, and half scallions, leaving most of marinade in bowl. Cook on each side about 1 minute. I like to get it good and brown. Remove, and do the same thing to the other half of steak and scallions. When this batch is done, add first batch back in with it, along with rest of marinade and snow peas. Stir over high heat 30 seconds to 1 minute. Turn off heat. Sauce with thicken. Serve over rice. Sprinkle with crushed red pepper to add a little spice. YUM!

The Marlboro Man Steak Sandwich       Pioneer Woman

1 large onion

1 1/2 sticks butter

3 lbs round steak(extra tenderized)

Lawry’s Seasoned salt

1/2 cups Worcestershire sauce

Tobasco sauce, to taste

4 deli/ french rolls

Slice onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside.Slice roundsteak in strips against the grain. Season with the Lawry’s. heat 2 Tbs butter in same skillet until melted, and beginning to turn brown.Add steak and cook about 1 minute  on each side. Add Worcestershire sauce(can add more if needed) , 5 or 6 shakes of tobasco, and 1 tbs butter. Cook about 30 seconds. Then add cooked onions. Stir to combine Use remaining butter to butter and brown each half of the french rolls. When putting meat on the hot rolls, add a little juice from the skillet. Devour!

Pepper Jack Meat Loaf    Susan Evans

1 egg

1 cup seasoned bread crumbs

1/4 cup chopped onion

1 tsp salt

1/2 tsp pepper

2 lbs lean ground beef

1 cup shredded pepper jack, or monterey jack cheese, divided

In large bowl, combine egg, bread crumbs, onion, salt and pepper. Crumble beef over mixture, and mix well. Press half beef mixture in loaf pan, sprinkle with 3/4 cup cheese  to within 1/2 inch of sides. Pat remaining beef mixture over cheese. Bake uncovered at 350 for 50-55 minutes. Sprinkle with remaining cheese. Bake 5 minutes or until cheese is melted. Let stand about 10 minutes before cutting.

Southwest beef strips     Susan Evans

1 1/2 pounds Sirloin Steak strips

Meduim onion sliced

1 red sweet pepper cut in strips

2 Tbs taco seasoning

1/4 tsp salt and pepper

2 Tbs oil

1 can black beans, drained

11/2 cups whole kernal corn

1/2 cup salsa

2 tsp cilantro

noodles of your choice

Stir fry Steak strips, onion, red pepper, taco seasoning, salt and pepper, in oil. When done, add black beans, corn, salsa, and cilantro. Serve over noodles of your choice.

Firecracker Casserole     Susan Evans

2 lbs ground beef

1 onion chopped

1 can black beans, drained

2 Tbs chili powder

2 to3 tsp ground cumin

1/2 tsp salt

4 flour tortillas

1 can cream of mushroom soup

1 can rotel

1 cup grated sharp chedder cheese

Brown beef and onion in skillet until brown. Add in black beans, chili powder, cumin, and salt. Pour in 9×13 baking dish. Top with 4 flour tortillas, then mix soup and rotel and pour over tortillas. Top with sharp cheese. Bake at 350 for 30 minutes.ENJOY!

Cheeseburger- Palmer Farms style

Pat out about 1/4 pound beef patty. Good, and thick. Heat cast iron skillet very hot. Add in beef patties, and apply plenty of salt and pepper. Do not flip until one side is very brown and crispy. Cook other side, add a little more salt and pepper, cook until no longer pink in the middle. Add cheese , then turn off heat. Let burger sit in skillet while you butter, and toast your bun. Add all your favorite fixins, and homeade pickles are a must! Warning- to get your burger good and crispy, you have to smoke up your kitchen a little bit, but I promise its worth it! OR, if its been one of THOSE days, just throw one of our pre made patties in a skillet and be done. lol

Taco Soup     Stacie Palmer

2lbs ground beef

1 small onion chopped

2 cans green chilies diced

1 1/2 packets taco seasoning

1/2 cup liquid ranch dressing

5 cans diced tomatoes undrained

2 cans kidney beans undrained

2 cans pinto beans undrained

2 cans hominy undrained

2 1/2 cups water

1 1/2 tsp salt

3/4 tsp pepper

Brown ground beef and onion in a large soup pot. When done,  add in all other ingredients and simmer for about 30 minutes. I serve with shredded sharp chedder cheese, tortilla chips, and sour cream. This makes alot of soup. And its even better the next day. We all love this soup!

Teriyaki Steak with Peppers and Pineapple  – Rhonda Roso

1/4 cup A1 steak sauce

1 Tbsp. brown sugar

1 Tbsp. soy sauce

1/2 tsp. ground ginger

1 lb. beef sirloin steak, cut into strips

1 green bell pepper, thinly sliced

1 sweet red bell pepper, thinly sliced

1 onion, thinly sliced

2 garlic cloves, minced

1 Tbsp. vegetable oil

20 oz. can pineapple chunks drained

hot cooked rice

In a small bowl, combine the first four ingredients. Set sauce aside. In a skillet or wok, fry the beef, peppers, onion and garlic in oil for about 5 minutes.sauce, top with pineapple chunks Cover and simmer for another 5 minutes. Serve with hot cooked rice.  Thanks Rhonda!

My favorite steak marinade – Stacie Palmer

1/2 cup soy sauce      2 Tbsp. vegetable oil

1 tsp ginger                 1/4 tsp. pepper

2 cloves garlic (or garlic power)

1 Tbsp. lemon juice     4 tsp. honey or brown sugar (I use local raw honey)

Marinate steak for 8 hrs or more.  I usually double this recipe since I am cooking steak for 5 people.

Side Dishes

Perfect Potatoes au Gratin     Pioneer Woman

4 whole russet potatoes

2 Tbs butter, softened

1 1/2 cups heavy cream

1/2 cup whole milk

2 Tbs flour

4 cloves garlic, minced

1 tsp salt

Pepper to your taste

1 c grated sharp chedder cheese

Preheat oven to 400 degrees. Smear softened butter in baking dish. Leave skin on potatoes, and slice fairly thin, then cut each slice into 4 pieces. In a large bowl, whisk together cream, flour, garlic, salt, and plenty of  black pepper. Place 1/3 potatoes in baking dish, cover with 1/3 cream mixture. Repeat this process two more times. Cover with foil and bake 30 minutes. Then remove foil and bake another 20 minutes. Add grated cheese and bake 3 to 5 minutes until cheese is melted and bubbly. These are soooo good. They are a perfect side, to the Italian roast beef. ENJOY!

Southern Bake Beans       Stacie Palmer

3 large cans pork and beans(28 oz)

8 slices of bacon halved

1 medium onion diced

1/2 green pepper diced

1/2 cup brown sugar

3/4 cup your favorite barbecue sauce

1/4 cup vinegar

2 Tbs Dijon mustard

Preheat oven to 300 degrees. Partially cook the bacon in a large skillet. When done, remove bacon, add diced onion, and green pepper into skillet with drippings, and cook about 5 minutes. Add in beans, and all other remaining ingedients, except bacon. Pour into a 9×13 baking dish, then top with bacon slices. Bake for approx. 2 hrs, or until desired consistancy. Every country cook needs a great recipe for baked beans and these are WONDERFUL!

Amish Corn     Stacie Palmer

1 stick margarine

2 pkgs frozen corn ( I use my frozen cream corn out of the garden. 2 quarts)

1 (8 oz) pkg cream cheese softened

1/4 cup sugar

1/4 cup water

salt and pepper to taste

Put all ingredients in crock pot and cook on low for 3 hrs.

Everlasting Slaw     Susan Evans

1 medium head green cabbage

1 medium onion

1 pepper

1 or 2 carrots

1 stalk celery

1 cup sugar

1 cup vinegar

1 tsp salt

1 tsp mustard

1 tsp celery seed

1/2 tsp tumeric

Shred cabbage, carrots,pepper,celery, and onion. Mix well. Boil vinegar, sugar, salt and spice, ONLY until well blended. Pour over slaw mixture. Let stand several hrs before serving. Refrigerate.

Fresh Strawberry Shortcake     Stacie Palmer

1 box butter cake mix (I prefer Duncan Hines)

fresh strawberries with sugar

cool whip

Bake butter cake according to package directions( I always add a small box vanilla instant pudding mix, it makes it very moist). For the strawberries, I buy fresh , from a local farmer, add sugar, then freeze them. This makes a super easy dessert thoughout the year. Thaw out a package of strawberries, serve up a piece of cake, top with strawberries, and cool whip.Done!

Chocolate Eclair Cake     Kirksey Country Store

1 Box Chocolate Graham Crackers

8 oz tub cool whip

3 cups milk

1 LG box vanilla instant pudding mix

1 can chocolate frosting (or your favorite homeade recipe)

In large bowl combine pudding mix and milk. fold in cool whip. In 9×13 baking dish layer chocolate graham crackers, pudding mix, repeat, then another layer of graham crackers on top. Spread chocolate frosting on top, refrigerate. My husband loved this cake so much that he asked the owner of the little counrty store in our town for the recipe. I get beggedasked to make it often!

Carmel Pecan Pie     Stacie Palmer

1 pie crust

3 large eggs

2/3 cup sugar

1 jar smuckers carmel flavored topping

1/4 cup melted butter

1 1/2 cups pecan halves

Preheat oven to 350 degrees. Place pie crust in 9 inch pie plate. Beat eggs slightly with fork in medium bowl. Add sugar, stirring until dissolved. Stir in topping and butter until blended. Stir in pecan halves. Pour into crust. Bake about 45 minutes until knife in center comes out clean.  Cool completely. Serve with ice cream, cool whip , or both! This is always my Thanksgiving pie!
