Pepper Jack Meatloaf
INGREDIENTS
1 egg
1 cup seasoned bread crumbs
1/4 cup chopped onion
1 tsp salt
1/2 tsp pepper
2 lbs. lean ground beef
1 cup shredded pepper jack, or monterey jack cheese, divided
DIRECTIONS
In large bowl, combine egg, bread crumbs, onion, salt and pepper. Crumble beef over mixture, and mix well. Press half beef mixture in loaf pan, sprinkle with 3/4 cup cheese to within 1/2 inch of sides. Pat remaining beef mixture over cheese. Bake uncovered at 350 for 50-55 minutes. Sprinkle with remaining cheese. Bake 5 minutes or until cheese is melted. Let stand about 10 minutes before cutting.
